Tzatziki is a traditional,Greek starter, that is part of every proper mezze platter. The original requires Greek yogurt which is firm and contains around ten percent of fat.
For the authentic taste use a vegan yogurt without any sugar or sweetener. Try different kinds and if in doubt, make your own vegan yogurt. It´s easier thank you think! Back in the days in Greece, when I could not find vegan yogurt, I made my own out of coconut milk and soy milk. The result was delicious even though it was a little liquid.
Wash the cucumber and grate it into pieces. Press the pieces and use the cucumber water for another purpose like Gin Tonic or cucumber lemonade. Cut the garlic into small slices and mix it with the cucumber and the other ingredients. Done! Tastes best when you chill it in the fridge for some hours. My recommendation: Enjoy your homemade vegan tzatziki with pita bread, potatoes, shredded seitan and raw veggies.
