Vegan hamburgers with carrots, zucchini and rice

 Vegan hamburgers are one of my favourite dishes! This is because

  1. Since I have been vegetarian for almost of my life and vegan for a decade, I never had hamburgers, when I was a child. They always were something fascinating for me. I tried my first hamburger at the age of 20 at a burger restaurant. It was a hamburger with avocado and a vegan patty. I was stoked after the first bite!
  2. Hamburgers are the ideal left-over food. Usually I prepare them, when I made too much rice, beans or lentils the day before. Also grilled veggies, nuts, vegan cheese-sauce or a home-made spread make vegan hamburgers delicious!
  3. It is kind of an democratic food. Especially if I have a lot of guests. The people, who are crazy about salad, take as much as they want. The others who crave raw onions, pickles or hot-sauce just go for it. Everybody prepares their own plate and the ambient is nice and relaxed for hosts and guests.

Of course there are a lot more reasons, to prepare hamburgers for your next party, picknick or for a day out in nature. But let’s go straight to the recipe!



  • one cup of
  • cooked rice
  • one
  • carrot
  • one
  • zucchini
  • one clove of
  • garlic
  • two tablespoons of
  • flour
  • salt, curry


Rasp zucchini and carrot in small pieces and mix them with the rice. Crush the garlic and add it. Season it with a little bit of salt and curry. Knead the dough with your hands. If it is nice and sticky, create small balls (tomato size) and flatten them with your hands. If the dough feels too moist, just add some flour. Pour some drops of oil in a pan and heat it up on medium to high heat. I usually cook with gas and just need medium heat, since it tends to get very hot. Fry the hamburgers from both side, until they are golden brown. I served them with raw pumpkin-seed spread, toasted bread, grilled eggplants, tomatoes, cucumbers, salad and crushed cashews mixed with nutritional yeast.hamburger
