Coconut macarons are a pastry, that is really typical in Germany. The original consists mainly out of egg whites and shredded coconut. Usually you find them in German bakeries around Christmas or at least during the cold season.
Since I loved them so much, I decided to create a vegan version as a Christmas gift for my friend Nuno (who is a vegan and also likes coconut a lot).
For the veganized version, I substituted the eggs with a vinegar/soy “egg”, wich makes the batter soft and moist. As a finish I used dark chocolate, that I mixed with a few drops of coconut oil.
Mix soymilk and vinegar and wait until the soymilk starts to curdle. Add sugar and oil and whisk the mixture together. Add shredded coconut, flour and salt and keep mixing the batter. The dough should be smooth, like brownie or muffin batter. Take a spoon and place little portions on a sheet of baking paper. Preheat the oven to 350 degrees fahrenheit and bake the coconut macarons, until the edges look toasted (takes around 20 minutes). If you want, decorate them with chocolate or confectioners sugar!
