vegan coconut macaronsCoconut macarons are a pastry, that is really typical in Germany. The original consists mainly out of egg whites and shredded coconut. Usually you find them in German bakeries around Christmas or at least during the cold season.

Since I loved them so much, I decided to create a vegan version as a Christmas gift for my friend Nuno (who is a vegan and also likes coconut a lot).

Add shredded coconut, flour and salt and keep mixing the batter. The dough should be smooth, like brownie or muffin batter. Take a spoon and place little portions on a sheet of baking paper. Preheat the oven to 350 degrees fahrenheit and bake the coconut macarons, until the edges look toasted (takes around 20 minutes). If you want, decorate them with chocolate or confectioners sugar!vegan coconut macarons
