Little vegan cheesecake for two

Cheesecake is a real childhood favourite of mine! I love the combination of refreshing yogurt, fruits and a crunchy crust. Today I decided to create a chocolate crust, since it tastes delicious with bananas and frozen raspberries. cheesecake

Ingredients

  • 150 g
  • flour
  • 2 table-spoons of
  • neutral oil
  • 2 table-spoons of
  • cocoa
  • pinch of
  • salt
  • 50 g
  • vegan cream
  • 125 g
  • vegan yogurt
  • 100 g
  • sugar or sweetener
  • one table-spoon of
  • corn-starch
  • bananas, raspberries

Instructions

cheesecakePut flour, cocoa, salt, oil and half of the sugar in a bowl and start mixing it. Add a little bit of cold water and keep kneading. Add more until the dough feels smooth and does not stick to your hands anymore. Place the dough on a sheet of baking paper and flatten it out with a rolling pin. Put the whole sheet with the dough in a little pan. Mix yogurt, cream, corn-starch and the rest of the sugar and pur it over the crust. Put the cake in the oven an bake it at 180 degrees celsius for around 30 minutes. Let it chill a little bit and decorate it with fresh or frozen fruits.cheesecake
