Who does not like pancakes? I personally love them! With one of my friends I even got the rule: Whenever it rains, we got to eat pancakes!
For the ones of you, who feel like missing out on the typical fluffy pancake, I created vegan buttermilk pancakes. The preparation is really simple and you need only basic ingredients, that you find in any nearby shop or even in your kitchen.
Caramelized pears, a hint of cinnamon, maple syrup and roasted almonds enrich the vegan pancakes with a distinct autumn flavor. If you feel like it, substitute these ingredients with fresh blueberries, chocolates sauce, vegan whipped cream, your version of condensed milk or whatever you feel like!
For the recipe it is important, that you use soy-milk. Opposed to other kinds of plant-based milks, soy-milk contains a lot of protein. In order for the buttermilk to curdle, around three percent of protein is necessary. Same goes for recipes for vegan mayonnaise by the way.
Mix soy-milk and vinegar and let it sit, until it starts to curdle. Usually that takes around one minute. Add flour, baking powder baking and salt. Blend everything together until you got a smooth, liquid batter, that easily drops off a spoon. Heat up some neutral oil and start frying your pancakes. Remember: Fry them on a high temperature! If it is too low, they gonna be soaked with oil. Only turn them, when the edges of the upper side already start to get dry.
Roast the almond in a pan without fat, until they are golden brown. Sprinkle them with salt.
Cut the pear in thin slices and roast them without fat until the edges start to get brown. Due to the natural sugar, the pears gonna develop a nice caramel taste.
Arrange pancakes, pears and almonds on a plate. Add berries to the mix and dust everything with cinnamon. Drizzle some maple syrup over your vegan pancakes and enjoy them warm!
