My sister recently asked me to create a recipe for her. She wanted something simple (preferably something prepared in the oven), healthy and easy to cook. Since I know, that she likes sweet potatoes, I decide to integrate them into the meal. As a base I used quinoa. The pseudo grain is tasty, filling and contains a lot of protein.
If you want to cook this is easy stew, you need around 30 minutes of total cooking time. Around 15 minutes of precooking and another 15 minutes in the oven. You can also sprinkle some vegan cheese on top of your quinoa gratin, before baking it. If you want an overall cheesy flavor and some extra minerals, I recommend adding nutritional yeast as well.
Start with cutting the onion, the sweet potato and the zucchini into small cubes. Fry the veggies for around three minutes. Add your quinoa and two cups of water. Stir the mix and let it simmer for around 10 minutes. Add the hazelnuts, salt pepper and a tiny amount of mustard. Stir it again and add 50 ml of your soy cream. Put the quinoa into an oven-proof dish. Mix the other 50 ml of soy cuisine with salt and pepper (optional: add nutritional yeast)! Sprinkle the cream over the quinoa/veggies and put the dish in the oven for around 15 minutes at 200 degrees Celsius.
