High-protein parfait with chia, flaxseeds, cocoa, dried figs and salted sweet potatoes

One thing I really like about cooking and baking is the contrast game. Sweet versus sour, spicy versus creamy texture or hot versus cold.

For this recipe I decided to work with a few contrasts: I combined a sweet, cold and super creamy parfait with crunchy, salted sweet potatoes, that I served hot. The result is delicious and makes refreshing parfait the ideal desert for those cozy autumn days.high-protein parfait

One serving (it is a big one though) contains more than 21 g of protein and makes the perfect after work-out snack. There is no refined sugar, no gluten and of course no lactose in the desert!

  • 50 g
  • chia seed
  • 50 g
  • ground flax seeds
  • 200 g
  • soy-milk
  • 10
  • dried figs
  • 2 tablespoons of
  • cocoa
  • hint of
  • salt
  • pinch of
  • cinnamon
  • one
  • small sweet potato
  • oil for frying


high-protein parfaitMix chia seeds, flaxseeds, soy-milk, figs and cinnamon. Put everything in a bowl and let it sit in the fridge for at least three hours. Usually I prepare it the evening before and enjoy it the morning after. Use a blender and blend the parfait, until it is smooth. Pour it into a glass, jar or bowl and put it in the freezer.

Take a vegetable peeler and peel your sweet potato. After peeling off the skin, keep grating it, until you got a bunch of thin, transparent slices.

Pour some oil into a pan and start frying the sweet potato stripes. In my case I needed around three minutes, until they were crunchy and started to get a nice, roasted flavor. Sprinkle them with salt and place them on top of your parfait. If you want, add some cinnamon, fresh figs or nuts as a healthy garnishment.
