I completely forgot about panna cotta, until one of my students told me last week, that her vegan panna cotta wasn´t quite a success. Since I believe, that everything can be veganized, I decide to create my own and it was super simple!
I like contrasts like sweet and sour or bitter and sweet, since they create an “eating experience”. For this vegan panna cotta I combined sweet and milky vanilla with refreshing passion fruit. The result tasted creamy and at the same moment light and fruity. I used fresh passionfruit but I am sure that you can as well prepare the desert with canned passionfruit pulp.
Bring your plant-based milk to simmer and add sugar and vanilla. Stir the milk and add agar agar. Keep stirring for another three minutes. Pour the milk into little cups or glasses. Don´t worry if its still very liquid! Agar agar needs low temperature under 40 degrees celsius for becoming thick as jelly.
Cut the passionfruit in halves and put the pulp (including seeds) in a small bowl. Add a small amount of water (two or three tablespoons do the job) and bring the mix to simmer. Mix cornstarch with a little bit of water and pour it into the pot. Take it off the stove and keep stirring for another minutes.
Check if the panna cotta is already solid and serve it with the passion fruit jelly!
